Basically, the wine is aged on the same yeast that fermented the wine. The benefits to the finished wine are many. First, the yeast act as a natural fining to remove any off colors and helps the wine retain a youthful color. Second, it provides a richness on the palate from the autolysis of the yeast which helps to incorporate a bit more acidity. Finally, it adds an interesting aroma that has been compared to oak, sometimes fresh bakery bread and even cookie crust.\r\nIt is fun to make because it allows for winemaking inputs that makes the wine really stand out and unique. For example, using oak to give a wine more flavor or intensity does not work with all wines (ex. adding more garlic to a dish does not always make it taste incrementally better). In this case, the oak marries with the more intense fruit flavors and adds depth and richness to create a more interesting and intriguing wine.","grapeDescription":"","tastingNotes":"I was attempting to channel one of my favorite wine regions: Burgundy, France. Basically, the wine is aged on the same yeast that fermented the wine. The benefits to the finished wine are many. Second, it provides a richness on the palate from the autolysis of the yeast which helps to incorporate a bit more acidity. Finally, it adds an interesting aroma that has been compared to oak, sometimes fresh bakery bread and even cookie crust.\r\nIt is fun to make because it allows for winemaking inputs that makes the wine really stand out and unique. For example, using oak to give a wine more flavor or intensity does not work with all wines (ex. adding more garlic to a dish does not always make it taste incrementally better).
