5 Sentidos Tobaziche Mexicano 50.9% 750ml Hi Time Pick; Spirits Distilled From Agave
| Description: | History: This batch of Tobaziche and Mexicano, bottled exclusively for Hi-Time Wine Cellars, was distilled from mature agave Karwinskii and agave Rhodacantha that were harvested outside of San Agustin Amatengo, Oaxaca. This is one of the first batches produced by father-son duo Luis and Sergio to be exported by Cinco Sentidos. Young maestro mezcalero Luis Enrique Suarez cooked approximately 4000 kilograms of the two species of agave in an underground conical oven for three days with native wood. After roasting, Luis mashed the cooked agave with a large tahona drawn by two bulls, then allowed the agave to ferment naturally with spring water for nine days in wooden tanks. The resulting tepache and mash were then distilled once in a copper refrescadera still at Luis' father's palenque. The resulting distillate was adjusted by Luis to a bottling proof of 50.9% abv. Nose: An intensely aromatic, feral nose with notes of collard greens, fountain pen ink, talc, and rock candy. Palate: A blast of wintergreen on the palate hangs around with red hots, cinnamon, candied bacon, and cayenne pepper as it continues to blossom over time. |
