So, I pair the larger, fruitier clone 23 with the smaller, denser more extractive clone 777. Both 115 and 667 are also fermented and vinified together. The fruit is crushed and held as a cold soak for 4-5 days with light pump overs. This encourages some wild ferment to start propagating, so when I turn up the tank temperature, the fermentation starts with quite a population of wild yeasts and as the fermentation progresses and the alcohol content increases in the juice, there is a self-selection of wine yeast to complete the fermentation to dryness. So, this is considered a wild ferment and because it is less efficient in converting sugar to alcohol, I can start with a riper fruit and have less alcohol converted in the finished wine. So, I pair the larger, fruitier clone 23 with the smaller, denser more extractive clone 777. Both 115 and 667 are also fermented and vinified together. The fruit is crushed and held as a cold soak for 4-5 days with light pump overs. This encourages some wild ferment to start propagating, so when I turn up the tank temperature, the fermentation starts with quite a population of wild yeasts and as the fermentation progresses and the alcohol content increases in the juice, there is a self-selection of wine yeast to complete the fermentation to dryness. So, this is considered a wild ferment and because it is less efficient in converting sugar to alcohol, I can start with a riper fruit and have less alcohol converted in the finished wine.
