Description: So you want something a little different and the Basque Region isn't strange enough? How about one of Tavel's most famous wines? Even in an appellation more famous for Rose than anything else, Manissy's Tete de Cuvee truly stands out! Made at this winery in this exact way since 1915- not a typo- this blend of Grenache, Clairette and Cinsault macerates for around two days on its mingled skins and then underdoes a slow fermentation that can last two weeks or more. Aged in old barrels for around a year, this ain't your typical backyard pink! Ageable for at least a decade, it has an amazingly silky, complex palate that brings to mind yellow cherries, plum jam and a host of exotic cooking and baking spices. Dry, minerally but not at all severe, it's a red wine dressed in pink. Or is it the other way around? But with tuna or salmon steaks off the grill, a spring leg of lamb or mildly spicy pokes, ceviches and the like, it's incomparable.
