Balcones Texas Malt Whisky is born of hundreds of years of distilling tradition transformed by a deep sense of place. Mellow notes of sauteed pears and ripe fruit mixed with a lingering toasty malt character. We are very excited that this whisky which we have worked so hard to produce in finally ready to release. We hope you enjoy it. The whiskey is handcrafted in small batches in copper pot stills. To maintain the full rich flavor it is non-chill filtered and has no artificial color or flavor. The mash bill is 100% malted barley. The hugest difference between this and other Single Malts is not just that it is from Texas, it is principally from how it is barrel aged. Each batch rests in a number of varying barrels in an assortment of sizes and made from a mixed bag of woods before the final marriage / aging is accomplished in big barrels; this big barrel was coppered from yard aged American Oak. The results are arresting, fantastic, intricate and uniquely exquisite. The aromas show over ripe pear, dark dried fruits and delicate spice perhaps simmered together as a compote very gorgeous. That flavors follow suit with an astounding display of complexity that does not focus or fade, but that is intricately persistent. The finish display traditional malts, honey and caramel along side of the recherch aromas and flavors. This is amazing whiskey. No wonder the Master Distiller just won Icons of whiskey and this whiskey just took Chairmans Trophy (Highest award) at The Ultimate Spirits Competition last month. True Blue 100 is made from the same select barrels of our blue corn whisky that have always gone into our True Blue Cask Strength, diluted down to 100 proof. As such, many Bourbon drinkers, in particular, may gravitate to this powerfully subtle dram. Since the Bottled-in-Bond Act of 1897, 100 proof has long stood for quality and authenticity. True Blue 100 carries on that tradition. 100% of the whisky in this bottle was born, raised, and bottled at Balcones from mash to glass. More approachable than full cask-strength whisky, True Blue 100 retains the depth and complexity of over-proof spirits with the softer edges, supple textures and fuller fruitiness that slight dilution can bring. Rich notes of honeyed citrus, stone fruit and cinnamon and a rich, roasted corn palate. Perfect or with as much water as you prefer. Balcones Lineage Texas Single Malt is a marrying of the traditional Scotch Single Malts that have long been an inspiration to the brand while innovating with new approaches to grain and maturation that celebrate Texas provenance. Lineage is made using a combination of Simpsons Golden Promise malted barley from Scotland as well as malted barley grown in the high plains of Texas. The spirit is then matured both in new oak barrels, as is the tradition with most American Whisky, and refill (or used) oak barrels, the more common approach with Single Malt tradition. By taking cues from two distinct approaches to maturation and malted barley, Lineage expresses Balcones appreciation of where whisky has been and where it can go in the future. Balcones Brimstone Smoked Whiskey This one-of-a-kind whisky is smoked with sun-baked Texas scrub oak using our own secret process. The result is a whisky full of fresh, youthful corn and light fruit notes married with a bold smokiness. Whether you like smoky whiskies, or just have a penchant for big, new flavors, Brimstone is sure to be a memorable pour. Aromas of masa, Texas campfire and powdered sugar backed by stone fruit, peppery spice, and mint. Bold yet balanced, Brimstone is yet another Texas original from Balcones. Balcones Brimstone is made by mashing and fermenting the corn, and distilling the resulting wash twice through Tate's copper-pot stills. Following distillation, Tate smokes the distillate the whisky that is produced after distillation but before maturation with sun-baked Texas scrub oak using a proprietary process that remains a closely-guarded secret. While a number of distilleries smoke grains prior to distilling them peated Scotch, for instance, is made by smoking barley over a peat flame Tate smokes the distillate that is produced after the wash passes through the still. Balcones Baby Blue is made from roasted Hopi blue corn and has notes of butter, toasted almonds, masa, and smoked peppers. Still, it's the gorgeous midnight blue kernels, packed with a rich, roasty nuttiness, that earned Baby Blue the Double Gold Medal at the San Francisco World Spirits Competition and 4.5 stars from Drink Spirits. "i wanted some corn with guts and really nice flavor," Tate says. He tried many varieties of corn, "but only the Hopi blue corn had depth and elegance needed to create something truly exceptional."Balcones never uses chill filtering or caramel coloring in making Baby Blue Whisky. Balcones Pot Still Bourbon Whiskey This all-new Balcones Texas Pot Still Bourbon, is distilled from a special mash of roasted blue corn, Texas wheat, Texas rye, and malted barley.This all-new Balcones Texas Pot Still Bourbon, is distilled from roasted blue corn, Texas wheat, Texas rye and malted barley in pot stills before being matured for two years in new charred oak barrels. It is then bottled at 92 proof.Texas Pot Still Bourbon is about inclusivity, aid Jared Himstedt, head distiller of Balcones Distilling, in a press release.
