Description: Though Il Censo had been a working farm with a small vineyard for more than 200 years, this family-owned-and-operated estate in south-central Sicily hit its modern age about 25 years ago. Estate owner Gaetano Gargano and his wife Nicoletta met Giampiero Bea, the winemaking son of Umbria's Paolo Bea, and they felt inspired by Giampiero's wines, his ultra-natural winemaking philosophy, and his passion for wine. Guided by Giampiero, Gaetano first planted about 12.5 lava-rich acres with two indigenous Sicilian grapes, Catarratto and Perricone; he was so pleased with the results that he added another nine acres, adding Nero d'Avola and Malvasia Nera to the mix. A certified organic estate, Il Censo uses wholly natural winegrowing and winemaking methods, including extended aging on the lees for its Catarratto, fermentation with natural yeasts, and no fining or filtration. The resulting wines are shockingly alive, super-primal, yet terrifically elegant. Il Censo is a natural winemaking phenomenon in the making!
