| Description: | A blend of Pinot Noir (50%), Chardonnay (25%), and Pinot Blanc (25%) from organically farmed vines grown in Kimmeridgian soils in Celles-Sur-Ource in the Aube. Initial fermentation is with indigenous yeast in tank, and the wine spends 30 months on the lees before disgorgement.
