Together, they've launched Clandestin, a micro-négociant focused on sourcing grapes from just 8 hectares of sustainably grown vineyards to craft some of the most terroir-driven Champagnes you can find. Their wines are produced in small quantities, all hand-picked and farmed with organic and biodynamic principles. The name "Clandestin," meaning "hidden" in French, refers to the overlooked, north and west-facing vineyards they cultivate above the town of Buxières. These sites, once passed over, now yield exceptional grapes. Each cuvée reflects its specific vineyard exposure: Austral's Pinot Noir comes from the warmer, south-facing slopes, while Boreal's is from the cooler, north-facing sites.
