Other attributes: Muroka (non-charcoal filtered). Misuzu comes from a microbrewery (of about 7 employees) located in the mountains of the Senba Kaido in Nagano Prefecture. There, they make a delicious, elegant yet fruity sake that is with a medium-bold flavor. You are greeted on the nose and palate by apple, yellow plum, and passionfruit. The finish is dry and direct. This is a fun and playful sake with a serious edge. Milled down to 35% of its Yamada Nishiki rice grain, the quality is superb. Normally you would have to pay up to $60 for a sake of this degree of milling, but the fact that we can sell it for under $40 make this an absolute steal! As soon as we tasted this and found out the price, we bought every bottle available. Grab it while you can. More about this brewery from our supplier: Founded in 1893, in Shiojiri, it became independent from the head family Chouemon Kumagai. In 1955, it became a company with the name of sake "Misuzu". The microbrewery established in 1893 is run by Kumagai-san, who is the fourth generation President and Toji (a brewmaster) along with the small team of four kurabito (brewers). Misuzu focuses the efforts in muroka (un-charcoal filtered) and nama (unpasteurized) and they also produce a sharp, delicious and trendy origarami (slightly hazy) style sake. The area is in a semi-highland area at an altitude of 750m, and the water and air are both clean, making it an ideal environment for sake brewing. The brewing water uses fine-textured soft water from the Narai River system to brew smooth and soft sake.
