Vinification: Vertical press, indigenous yeast fermentation with no added So2. Aged for 18 months in older barrels, minimal sulfur additions only at racking and bottling. Decanter 93 Points - " Sylvain Pataille is crazy about Aligot, so it is little surprise that he has expanded his range to include the only commune where the grape is authorized for village-level production. The grapes are from vines in the lieu-dit Corcelles planted in the 1950s. The 2021 vintage is delicious, with fresh aromas of grapefruit, tarragon, and white flowers. The texture is supple and ripe, with an elegant, ethereal quality highlighted by a pleasantly bitter note on the finish. The grapes are firmly pressed in a vertical press and fermented on native yeasts with no sulfur added until bottling." |
