| Description: | These head-trained Pais vines are planted on very old soil of granitic, sandy loam formed by Chile's coastal mountains. Pais Viejo is 100% naturally-vinified using century-old winemaking techniques, including the use of the zaranda (a structure made of sticks to destem the grape clusters). The grapes are hand harvested and fermented with native yeasts in concrete tanks to preserve the wine's authentic expression of terroir. Producer At J. Bouchon, above all things, we believe in family tradition and in the identity of our wines. Our story begins in the year 1892 when Emile Bouchon, a native from Saint Emilion, Bordeaux, France settles in the Colchagua Valley, Chile, with the visionary dream of producing wines of excellence in the new world. In the first half of the Xx century, Antonio Bouchon would cultivate with effort and dedication the vineyards planted by his father and sowing the legacy of the family. During the sixties the youngest son of Antonio, Julio Bouchon, enologist from the university of Bordeaux and current president of the company, would continue shaping with pride the family tradition. With the acquisition in 1977 of the Santa Maria de Mingre estate un the Maule Valley, began an ambitious process of modernization that would include the construction of new facilities and the planting of traditional varieties. Thanks to this visionary effort, in the decade of the nineties our wines started being exported from Chile to the world, consolidating our firm as an internationally recognized winery. Today, with more than a century of wine growing tradition, Julio Bouchon and his children perpetuate this deeply rooted family inheritance, producing wines of character that, just their own history, are bound to the terroir from where they come. |
