| Description: | Matteo Ellena seems to be the perfect combination of both modernist and traditionalist, combining organic farming, native yeast, 45–60-day fermentation and limited use of barriques. Both barriques and 30hl Slavonian (75%) are used to make a wine with orange zest, baking spices, cherry, leather and classic tar. The wine is a touch backwards in the mouth, in a good way, with the tannins making and immediate presence, then softly fading to a round and lengthy finish. |
