Perfectly ripe Kyoto-grown plums are picked from Akio Tanakas farm south of Uji at the peak of the season and macerated for several months in a specially tweaked version of our award-winning gin. When optimum extraction is reached, the ume plums are removed and we add haskap berries from Hokkaido for a few short weeks: these are then discarded before our delicious liqueur is sweetened with sugar also from Japans northernmost island. Haskap comes from the Ainu word meaning the little present at the end of the branch: they are from the honeysuckle family and are also known as honeyberries. Bai is another word for ume plums and this liqueur is a liquid embodiment of our philosophy of East meets West. The label design has been created from an original woodblock print by Kira Karacho, successor to a karakami atelier founded in Kyoto in 1624. Tasting Notes,. Ruby red and silky in appearance, Ki No Bai offers aromas of blackcurrant and cherries on the nose with hints of almonds and pine cones on the palate. A medium length finish is beautifully balanced between sweet and sour: very drinkable. |
