The contact time with the grapes\/wine is moderate and the grapes are pressed after the wine is dry. To help with the maturation, there is some barrel aging and judicious aging of the wine. I found that blending a small amount of cabernet sauvignon was very complementary to the wine. This is my riff to produce a super-Tuscan wine by blending cabernet with Montepulciano where the Monte adds fruit and brightness and the cabernet is all about structure and richness.
