Description: From their domaine in Pommard, the Rebourgeons tend 18 acres, divided between many well regarded holdings in the appellations of Beaune, Volnay and Pommard, planted entirely in Pinot Noir and averaging more than 40 years with the oldest parcels of Pommard planted in 1902. The viticultural and winemaking methods have not changed much in the last five centuries: Responsible farming, manual harvest, and an aim to make elegant wines with ability to age. Daniel & David Rebourgeon Daniel Rebourgeon and his son David own and operate one of the oldest estates in Pommard, started by their ancestor Jean Bourgogne in 1552 who had taken a 99 year lease to raise vines at the holy abbey, Marguerite of Bouillard. Domaine Rebourgeon-mure 2020 Bourgogne Cuvée de Maison Dieu 100% Pinot Noir Terroir: AOC Bourgogne, Burgundy adjacent to Pommard. Vines are 40+ years old Vignification: The viticultural and winemaking methods have not changed much in the last centuries: Responsible farming, manual harvest, and the aim is to make elegant wines with the ability to age. The yield is controlled, and the focus is on the maturation of the grape. All of the grapes are 100% destemmed and inspected in the cellar before going into temperature controlled cement tanks for a 5 day cold pre-fermenatation. The aging is carried out in a cellar underneath the winery in neutral oak barrels for 14 to 18 months, before they are estate bottled. Tasting Note: Aromas of sweet fruit and hints of liquorice. The palate is of cherry, raspberries, and black fruit with a rich, long and juicy finish balanced by great acids and earthiness.
