Description: Note! Please keep this Sake chilled. Imagine if a sake, a natural wine, a sparkling wine, and a skinny Margarita all had a baby. Welcome to Funkytown. This is a unique, lively, energetic brew that has a bouquet of passionfruit, kumquat, lychee, lime, lime blossom, and stargazer lily. On the palate you get more of that fresh squeezed lime, along with some passionfruit and kefir milk. It is nervy, slightly fizzy, a hint of creaminess and so much fun. The alcohol is slightly lesser than most sakes (15-16%), at only 12% Abv. This is a Pet-Nat (slightly sparkling) Sake that is also a light nigori. The rice is Yamadanishiki milled to 60%, using yeast #9. What they do is they take some pressed, clear sake, and to that they blend in some nigori that is taken from the early stages of the moromi. This is sake that is still in the active fermentation stage, so when it is blended and bottled, that sake is very much still alive! So please be careful opening this, make sure it is very cold, otherwise it can overflow. Matsuse Sake Brewery is located in Shiga Prefecture on the eastern side of Lake Biwa. They have been owned and run by the same family since the 1850s for six Generations. Matsuse is one of the few brewers obsessed with soil types. They are one of the most respected and praised small sake breweries. Even in Japan, their sake is not easy to find as they are very selective about who sells them. Their sake-making is traditional and clean, just handcrafting throughout and no charcoal filtering. Most of the rice they grow is done without using any chemical agents or fertilizers.
