Description: Pais was at the beginning of American wine. It had been brought to the Canary Islands as cuttings from Castilla in the 15th century, and crossed the Atlantic in the holds of westbound galleons with Spanish missionaries and colonizers. Half a millennium ago it was already up and down the west coast of the Americas, vineyards planted for sacramental wines or just as a settler's taste of home, the first wines of California, the first vineyards in Chile and Peru. Called ‘black grape', uva negra, for centuries, it bears many names today: listan prieto, criolla chica, mission, pais. It's been misunderstood, neglected, and marginalized in all of them, thought only good enough for raisins and jug wine and pipeño for the campesinos. But the history of this vine has made it uniquely able to show us how deep the history of ‘New World' wine really goes, and what American wine in the most capacious sense of the word can mean. A sequel to last fall's deep dive, I'm excited to share everything I've learned about this variety since, and to taste three compelling expressions of its future.
