| Description: | Winemaker Notes\r\nOur Cabernet Sauvignon comes from Maipo Valley, one of the finest wine producing regions in the world. The result is an expressive ruby red colour wine. Its aromas recall ripe, black fruit gracefully combined with vanilla, tobacco and cloves. The result is a medium bodied wine, balanced and lingering persistance.\r\nThe vineyards are located in the Andean piedmont, where cool afternoon breezes help slow ripening and produce fruit that stands out for its balance and fresh varietal flavors. The grapes were harvested in April.\r\nFermented with selected yeasts at temperatures between 25\u00b0 and 28\u00b0C with high color extraction at the beginning of the this process. This was followed by fermentation at a lower temperature so as to ensure a different extraction of the skin components. A long post maceration at low temperatures assured an adequate extraction for the ageing of the wine. 60% of the wine was aged in a combination of American oak barrels for 8 months. The remaining 40% was aged exclusively in stainless steel vats until bottling.\r\nAbout Santa Rita Winery\r\nVi\u00f1a Santa Rita was founded in 1880 by Don Domingo Fern\u00e1ndez Concha, a leading businessman and public figure of the time. Don Domingo brought the finest French grape varieties to the rich soils of the Maipo Valley, together with specialized equipment and a team of top winemakers from France. This brought techniques that were hitherto unknown in Chile, changing the way in which wines were made in the country and bringing spectacular results.\r\nIn 1980 the company became part of the Claro Group, and the new ownership brought a major leap forward in quality and business acumen. Major investments were made, allowing exports to be increased by the end of the 1980s. The new owners also implemented a range of technological innovations, allowing the company to craft higher-quality wines.\r\nSince then, Vi\u00f1a Santa Rita has continued to work with the latest and most advanced technology to create exquisite wines for each of its product lines, bringing forth the many prizes and awards that it has earned over the years. |
