Aglianico has a very firm tannin and medium in structure. So, a winmaker cannot push the extraction levels too far otherwise the wine will become lean and tannic. Aglianico has spice and fruit and plenty of structural tannins. The key is to soften the tannins through classical winemaking and judicious aging. Waiting a couple of years after the vintage is a prime example by allowing the tannin to age out.
