Description: | PĂŠtillant Naturel, French for mildly, naturally sparkling, is an old wine style that has found the limelight again over the last few years-- maybe initially with more of the wine geek or cork dork crowd. These are lightly sparkling wines that are also slightly lower in their alcohol levels-- there are no added sugars or yeasts and fermentation is interrupted before the native yeasts have consumed the grapes' natural sugars. Carbon dioxide, a byproduct of fermentation, creates the light sparkle when the wine is (usually) crown-capped. The lower alcohol and nice spritz makes pĂŠt-nats, naturellement, great quaffers during the warmer months of the year and that is why we have been touting them for last few years. Until now the French, lead by a number of Loire Valley young guns, have dominated this category while we have only heard faint rumblings about U.S. producers getting into game. That is why we are so pumped up about finally being able to offer this dazzler from Onward our first American made pĂŠt-nat from California's north coast. Onward's winemaker Faith Armstrong-Foster explains her concept succinctly; "This wine was made with the goal of being true to the nature of an authentic PĂŠtillant Naturel style wine; I encouraged native yeast fermentation, which was then finished in the bottle, and no sugar or other juice was added." The result is a fizz that magically juxtaposes nuanced fruit and fermentation flavors with buoyantly fresh acidity and gentle effervescence. Armstrong Foster left the yeast (and crown cap) sediment in place believing it adds a purity and complexity that is vital to her vision for this wine. The nose is clearly Malvasia with sweet stone fruits, apricot crĂŠme and lush florals tempered with definite citrus shadings of grapefruit and lemon-lime. In the mouth, more stone fruits and citrus are lined by a touch of chalk as the clean acidity and overall dry nature of the wine keep its mise-en-scĂŠne moving freshly upward. Chill upright for several hours to let the yeast settle before serving this quintessential summer refresher. |
