Preservation Distillery decided to honor this legacy by creating this single barrel whiskey which was distilled at an unknown distillery in Tennessee and aged for 7 years in Kentucky. Wattie Boone & Sons 7-Year American Whiskey is bottled at 94.7 proof Color Golden Honey Nose The nose is relatively light and simple, but it works. An initial dose of ethanol dissipates quickly, revealing vanilla candy, plenty of toasted grain, the slightest touch of oak char, and a few muted notes of dried citrus peel. Palate Consistent with the nose, the mouthfeel is somewhat thin and initially dominated by toasted grain. A soft spice develops on the tip of the tongue along with some baking spice, plenty of oak, and a few hints of powdered sugar sweetness. Finish The finish is medium-long with some soft rye spice transitioning from the palate and a more prominent honey sweetness. The same baking spices mingle with more toasted grain and some oak tannins, creating a relatively dry, bitter finish. |
