After 200 years, Pernod continues to distill absinthe the traditional way, remaining faithful to its 19th century roots. The absinthe plants are still harvested locally in Pontarlier, and then distilled in wine alcohol in the village of Thuir. An so Pernod has kept its traditions alive since 1805. |
