Former Mgp Master Distiller Greg Metze left the Indiana distillery in 2016 to work in spirits consultation full-time, but now works exclusively with Old Elk in Fort Collins, Co. The distillate from some of his last work while at Mgp now makes up the bulk of Old Elk. Utilizing a mash-bill with nearly four times the malted barley of most commercial bourbons, combined with a Slow Cut proofing process that takes place over several weeks rather than a couple of days, he has created something uniquely his and dangerously delicious. Expect generous caramel, dark sugar, apple pie and a hint of savory herbs balanced by ample oak and a healthy dose of rye spice.
