Description: 100% Chasselas. Chasselas, also known as Fendant, is the number 1 white grape produced in Switzerland. Its origin dates back to the Roman Empire and is known as the benchmark for Swiss wineries. Location: In the Geneva countryside bordering France, Domaine du Centaure sits at the foothills of the Jura and Saleve mountain ranges. Soils are a mix of the regions soil, including sand, clay & rock. Region: The Swiss village of Dardagny is situated 15 miles from Geneva in the middle of its wine country. This terroirs climate is characterized by hot, moderately humid summer days with daily ranges of up to 86 degrees Fahrenheit, relatively cool nights with occasional rainstorms. All grapes are harvested by hand. Each varietal of grape is harvested separately, de-stemmed, and kept separate during all stages of vinification. The vineyard is trellised using Guyot-style pruning on wires. It is extensively thinned after flowering and defoliated by hand to leave 600-700g per square meter. Tasting Note: Pale yellow in color, this wine is light-bodied and bright with good acidity with hints of lemon, white flowers and gleaming minerality.
