| Description: | Organically Farmed. 50% Macabeu, 40% Garnatxa Blanca, & 10% Cartoixa' (aka Xarel-lo). This is part of the continuing wave of winemakers looking to make wines of their place ( "terroir" ); it's the antithesis of larger-scale commercial styles that aim for familiarity. The use of some extended skin maceration and aging for 1 1/2 years between large, neutral oak and cement makes for a lightly oxidative style of white with a subtle grip in the mouth. Apple with a gentle nutty character that does not get in the way of a core of freshness. Lightly-to-moderately phenolic on the finish, acting as a counterpoint to the generosity of the mid-palate. Warming alcohol. Distinctive, complex, and rustic. ". we wanted to make a white Mediterranean local varieties wine: Garnatxa Blanca, Macabeu and Cartoix. Voluptuousness, elegance, and uprightness. Big words. The wine evokes aromas of autumn, ripe fruit, nuts, seeds. lovely creamy texture and long finish. Prepare to be seduced!. A small part of the grapes is macerated with skin during 3/5 days in open containers to make the starter (pie de cuba) to get native yeast. Another 20% is macerated with skin during 24h to 15 days depending on the variety and the extraction we want to reach. The rest goes straight to the press. It is aged for about 14 months initially in barrels of different volumes and in foudres (5000 and 2500 l) with fermentation lees. It is later refined in cement." - Winery Notes |
