Description: Manufacturer's Notes : Batavia was the name of the capital city of the Dutch East Indies, and corresponds to the present day city of Jakarta. Batavia became the center of the Dutch East India Company's trading network in Asia. The trade in Batavia arrack was entirely in hands of the Dutch Voc. Virtually all arrack eported to Europe arrived in Amsterdam or Rotterdam in wooden barrels or buts (563 liters). This would then be matured and blended to create an end product of consistent quality and flavor. How It's Made --> Hand Crafted. Our "Batavia Arrack" is a distillate based on sugar-cane molasses, produced exclusively on the idea of Java, Indoneisa, dated back to the 17th century. It's comprised of a very specific range of pot still distillates. It's the "rum of Indonesia." The slow fermentation process includes the use of "wild yeast" uniquely grown on dried local red rice (beras merah), providing a kick-start for fermentation and gives the unique character to the rum. Distillation of our Batavia Arrack is carried out using very traditional pot stills, adopting ancient Chinese distillers' methods. Our Master Blender created an excellent product causing fantastic rich and deep flavors, lingering on the palate. Distilling Process:. 1. Fermentation of the wash from molasses (sugarcaneby-product) and water in wooden vats up to +/- 8% Abv. 2. The ready was is distilled in very old fashioned pot-stills up to +/- 30% Abv. 3. Second distillation in another Pot-still up to +/- 60-65% Abv. 4. Rested in large teak wooden barrels for a period of 8-12 months, before traveling to Amsterdam. 5. Blended in Amsterdam according to an unique and secret recipe by our master blender and brought back to 48% Abv. 6. No additives and Vegan friendly. The Name "Batavia Arrack". The word "arrack" is probably of Arabic origin. It means "condensation" or "sweating", a reference to the process of distillation. In the Middle and Near East, there is another drink with a similar name: arak or araq, which is often produced from grapes and flavoured with anise and pastis. Another variant is produced from palm leaves and coconut. Historically, Dutch trading companies always used the term "Batavia Arrack" for this Indonesian Rum.
