| Description: | Size: 0.5 ha (1.24 ac). Variety: Chenin Blanc. Vine Age: Planted in the 1960s. Viticulture: Sustainable, organic methods. Vinification: Sorted directly in the vineyard (with sorting table), pressed with whole clusters, settled and decanted, 2-4-week ambient yeast fermentation in steel tank at 20C, no malolactic conversion due to the very low pH (between 3.07 to 3.12) and the cold cellar environment (10 to 12C), aged for 12 months on the lees in barrels (50% 225L barrels of one wine, 50% 225L barrels of 2-3 wines), racked and aged for an additional 6 months in steel tank. 25-60 ppm total SO2 at bottling, lightly filtered. |
