Description: | Fourth-generation vigneron Jean-Marc Pillot is something of a rockstar in Chassagne. After studying at the Lycée Viticole in Beaune, Jean-Marc began working with his father, Jean Pillot, in 1985 and he assumed control of the estate six years later. Jean-Marc has strived to leave his own personal imprint on his domaine's wines while remaining true to the history of his father's estate. Over the past few decades, Jean-Marc has taken his vines organic, built a new wine cave, tinkered with vinification and elevage, and moved to fermenting with only indigenous yeasts. He has also expanded the estate to about 30 acres of land, with grapes coming from an additional five or so acres coming from trusted négociants. While Jean-Marc Pillot's holdings are mainly in Chassagne, the domaine also has vineyards Puligny, Santenay, Meursault, and Remigny, and though the estate primarily crafts white wines, it is well known for some spectacular reds. Recently, Jean-Marc's son Antonin has begun assuming control of his father's estate, ensuring the Pillot family's legacy of pure, traditional, expressive white Burgundies. |
