The Fiano di Avellino from Colli di Lapio has been entirely fermented in stainless steel vats, and has an elegance and vibrant acidity the echoes a Grand Cru Chablis. Simply put, this is an outstanding example of one of Italys most exciting native varieties. Highly aromatic nose, this wine delivers honey, lemon, liquorice and tarragon, plus a saline character. Strong acidity and concentrated, piquant flavors of citrus rind and minerals give this very impressive, yet somehow delicate, wine great intensity. Grilled pear salad with bacon, roquefort and port vinaigrette, grilled shrimp salad with lemongrass and chilled or poached salmon with lemon mayonnaise. It finishes very long and firm. |
