| Description: | This 2017 Cabernet is made using traditional Bordeaux varieties grown on the estate: 85% Cabernet Sauvignon, 8% Petit Verdot, 4% Petite Sirah, 2% Malbec, 1% Cabernet Franc. Blackberry fruit aromas with tea leaf and cedar notes. The palate is rich and polished with dark fruit, mocha flavours and balanced acidity. A long finish with fine tannins typical of Jonkershoek Valley wines. The grapes were hand sorted and crushed into small open-top fermentation vats, with manual punch downs every 4–6 hours until dry. At dryness, the wine was basket-pressed and racked to barrel for malolactic fermentation and barrel maturation. Aged in 300l French oak (30% new) for 20 months. Bottled without fining or filtration. |
