Description: | The amarone is obtained using the traditional appassimento method, a natural drying process of Corvina, Rondinella and Corvinone grapes, and long barrel aging, giving it a unique and immediately recognizable taste. It represents the full expression of the Veronese tradition and the more than century-old family heritage. Amarone della Valpolicella Classico Riserva fruit comes from the Tenuta Santa Maria, a 20-hectare belted clos in Negrar. The grapes are hand harvested left to dry for 4/5 months. After losing 25%-30% of their weight, the raisin-like grapes are pressed and fermented for 25-30 days at controlled temperatures with daily pumping over. After 48 months of aging in large cask and tonneaux the wine is bottled and rested for 6 months before release. The wine has a ruby red color with garnet reflections.
