Description: | Situated on the left bank of the Rhône between Orange and Avignon, the Mont-Redon vineyards feature large, rounded stones known locally as galets. These stones retain some of the intense daytime heat of the southern sun and then slowly disperse it to the vines during the night. The Mistral wind blows away any humidity, ensuring excellent climatic conditions for the cultivation of vines. All grapes are handpicked and pressed using pneumatic presses, and the juice is then clarified by cold sedimentation and a light fining. Fermentation takes place at a low and constant temperature. Bottling takes place after tank aging on the lees as well as aging in old oak barrels. White fruit, floral and citrus aromas introduce a perfect balance between richness and acidity with intense, ripe fruit and a clean, voluminous finish. Pair with shellfish or light fish. |
