The fruit is hand picked followed by crushing, cooling of crushed grapes, and pressing. Fermentation begins by inoculating with selected yeasts. Halfway through the fermentation process, the wine is centrifuged (spun) to haltfermentation, creating a slightly sweet, semi-sparkling wine. |
