| Description: | This Cabernet Sauvignon was picked in the early mor ning hours of October 5th 2007 from the Shoup Vineyard in Lodi, which is composed of sandy cay soil. The must was fermented for 9 days in a stainless steel fermentor and left on the skins dry for an additional 24 hours. The wine was racked into 70% older French and 30% American oak barrels for 18 months prior to bottling. The cool fermentation temperatures accentuated the cherry and cassis aromas. 1 ½ years in barrels has mellowed the heavy tannins; resulting in a rich, full-bodied wine with varietal flavor and nuances of toasty oak. |
