| Description: | Cabernet Sauvignon from Pays d'Oc (Vin de Pays - So uth of France) The cool location of the Limoux region in the Languedoc is very similar to the best French regions where this grape is grown. It's sunny but not hot, the nights are cool but not cold. The climate provides the perfect balance of temperature for Cabernet Sauvignon to express its richness and complexity. The grapes are totally de-stemmed. The pre-fermentation in stainless steel vats lasts 4 days. The alcoholic fermentation lasts 2 weeks with temperature control. In order to extract a good structure with soft tannins, the daily extraction is very soft. The tannic potential of Cabernet Sauvignon is huge so we have to be careful not to disturb the balance this wine. Thus, the maceration is quite short. After the malolactic fermentation, the wine stayed 6 months in vats, just enough time to soften the tannins of this very fruity and full-bodied Cabernet Sauvignon. |
