"Essay" refers to the popular abbreviation for South Africa (s.a.) as well as implying an "assemblage" or blending of varieties to create a harmonious wine greater than its parts. The vineyards are unirrigated and planted on old Malmesbury shale soils producing wines with distinctive flavor and texture. Especially tasty with ham, curried chicken salad, or roasted butternut squash. |
